When I was 18 I began to experience anxiety and anxiety attacks. 5 years ago, I was away at college & chancy came to visit me. We were sitting in a cafe having a sweet time then suddenly I began to panic. My heart started racing, I suddenly was having a really hard time breathing, my chest was tight, the whole room felt like it was closing in on me and I was so terrified I wanted to burst into tears... I had no idea what what happening and I felt as though I had zero control. In the first year I was experiencing this, I had NO idea that I was suffering from “anxiety”. I was barely familiar with the term and it just simply was never a topic I had discussed with anyone. I was uneducated, uninformed and if you would have told me at that time... that I was suffering from a mental illness I would have felt alone & embarrassed.
Im sharing this with you all because you’re NEVER alone and this is not something to be embarrassed about.
Restless sleeps, 4 am anxiety attacks, tired anxious mornings & negative thoughts.
There are solutions. I wanted to share my top 5 things that has helped me immensely.

3. Daily journaling. Write out all your thoughts. Positive & negative. It’s important to release. Don’t keep it all bottled up in side.
4. Make your private space a calming little sanctuary. Fill your space with crystals, candles, plants..things that make you feel good and comforted. Crystals I especially love are selenite, clear quartz, citrine, rose quartz & amethyst.
5. Try to avoid coffee & highly caffeinated beverages. I like teas, kombucha & matcha. Just do what works for you in terms of caffeine.

Vegan mushroom spinach raviolis with a kabocha garlic sauce💫 One of my favorite things ever. Tag a friend and make some homemade raviolis or tortellini this holiday season.... THEYRE SO WORTH IT!

3 cups flour, sifted
4 vegan “eggs” (@bobsredmill Egg replacer)
1 1/2 tsp avocado oil (or olive oil)
1 tsp salt
3/4 cup water (divided)

Vegan ricotta

8 ounces mushrooms, chopped small
1 (14 ounce) package of firm tofu
1 cup raw almonds
1/2 tsp salt
4 tbsp nutritional yeast
1/2 tbsp garlic powder
1/2 tbsp onion powder
1/4 tsp pepper
3 cups chopped spinach
1/2 cup unsweetened almond milk

Kabocha sauce

1 small kabocha sauce (about 1 1/2 cups chopped)
3/4 cup filtered water
3 cloves garlic, minced
1 yellow onion
3 tbsp nutritional yeast
1/2 tsp salt
1/4 tsp pepper
Method:
1. Cut kabocha squash in half and scoop out seeds. Chop into chunks (you can leave skin on! It’s totally edible and softens up in oven). Bake in oven at 400 degrees F for 35 minutes. *you can also steam kabocha squash instead of bake*
2. In a pan heat 1 tsp in coconut oil. Chop onion and mince garlic. Combine in a pan over medium heat and sauté for 5 minutes or until slightly golden.
3. Once kabocha squash is cooked, combine in high speed blender with cooked garlic and onion & all the other sauce ingredients and blend for 1 minute or until smooth! •

SO. Yesterday’s post I asked what holiday recipes you guys want to see and I love that many of you said Mac n cheese BUT a ACTUAL CHEESY one. One that doesn’t contain of cashews and nutironal yeast 😂 (aka a classic vegan Mac). But okay, I hear you. I will work on a decadent, CHEEZY & Maybe a little guilty 😏 Mac n cheese recipe. Will be throwing in the best vegan cheeses on the market... @chancy.james is an expert at vegan cheeses 🧀
WHO IS READY!? Meanwhile check out this Smokey very tasty Mac n cheese bake!
12 ounces macaroni noodles (I used brown rice noodles)
Sauce:
1 cup raw cashews
1 (15 ounce) can cannellini beans
1 red bell pepper
1 tbsp miso paste
1/2 cup nutritional yeast
1 cup unsweetened plain almond milk
Juice of 1 lemon
1 tsp liquid smoke (optional but highly recommend! gives a smokey “cheesy” flavor)
1/2 tsp salt
1/4 tsp pepper
Homemade (GF) bread crumbs (Feel free to use store bought)
4 slices gluten free bread (I used follow your heart brioche loaf)
3 tbsp nutritional yeast
1 tsp garlic powder
1 tsp dried oregano
1/2 tsp salt
Optional topping
Fresh Chives
INSTRUCTIONS:
1. Preheat oven to 375 degrees F.
2. Soak cashews in hot water for 15 minutes.
3. Cook noodles according to directions on the package.
4. Remove seeds from bell pepper and cut into 4 pieces, place on baking sheet lined with parchment paper and bake in preheated oven for 10 minutes.
5. Once bell pepper is out of the oven (leave oven on for the mac n cheese) place it in a high speed blender along with soaked cashews, cannellini beans, miso paste, nutritional yeast, macadamia milk, lemon juice, liquid smoke, salt & pepper.
