Felt a little lost and frustrated for a moment while I was recipe testing but reminded myself to take a step back and acknowledge that life is not perfect. Even when you're doing what you LOVE, things may go wrong but that's life! Take in the positives and let go of the negative thoughts or moments.

shell pasta with vodka-less creamy sauce.
RECIPE
Ingrediente
300 grams of penne pasta or pasta of your choice (I used @eatbanza pasta)
25 ounce jar of tomato spaghetti sauce (I used the organic spaghetti sauce from trade joes)
1 cup plain (vegan) coconut milk yogurt (You can use “so delicious” brand or any of your choice)
1/4 cup nutritional yeast
Pepper to taste (you can add salt if desired but because the pasta sauce already had salt I decided to ditch it!) Method:
1. Cook pasta according to its directions on the package
2. Place pasta sauce, coconut yogurt and nutritional yeast to a pot over medium heat and stir until the sauce begins to simmer.
3. Mix sauce into cooked pasta noodles and top with fresh parsley, a sprinkle of nutritional yeast and fresh ground pepper.

It's PEACH/ CHERRY SEASON PEEPS! One thing I learned when I went vegan is the importance of shopping local and organic as often as possible! I would say 80% of my groceries are local and the 20 % are from @sprouts or @traderjoeslist !
