Alexa Plant Food VEGAN AND GF CARROT

VEGAN AND GF CARROT CAKE BREAD ๐Ÿฅ•
Made this healthy BUT of course delicious version of carrot cake that way you guys could have it for breakfast ๐Ÿ˜! Oh and the recipe is SO EASY!

INGREDIENTS
3 cups oat flour (or rolled oats *blended until flour consistency*)
1/2 cup coconut sugar
1 teaspoon baking soda
1 tsp cinnamon
1/4 tsp all spice
1/4 tsp nutmeg
1/2 tsp salt
1 1/2 cup carrots, grated
1/2 cup unsweetened coconut shreds
1/2 cups walnuts, chopped
1/2 cup golden raisins
1/2 cup maple syrup
1 tsp apple cider vinegar
1 tsp vanilla
5 tbsp unsweetened apple sauce
1 cup unsweetened almond milk

VEGAN BBQ jackfruit PIZZA!

BBQ jackfruit pizza
Ingredients :
1 pound refrigerated pizza dough (I get mine from trader joes)
4 ounce can jackfruit (in brine or water) or @thejackfruitco bbq flavor!
3/4 cup barbecue sauce, divided
3/4 cup shredded vegan cheese (I used follow your heart mozzarella shreds)
1/4 small red onion, thinly sliced
2 tablespoons chopped fresh cilantro

Spicy seasoned sweet potato fries w/ mash avo & cashew crema ❣️
Cashew crema Recipe:
1/2 cup raw cashews (soaked for 2 hours) 1/2 juice of lemon
1/4 cup water
1 tsp garlic powder
2 tbsp cup nutritional yeast
•In a blender place all cashew cream sauce ingredients and blend until smooth. #vegan #fries

Artichoke (vegan) ricotta grilled cheeses! Who wants one!?๐Ÿ™ƒ One of my most favorite recipes I have created to date is my spinach almond ricotta ! Iv thrown it into lasagna , pasta, pasta shells, pizza, tortellinis and now into a sandwich ๐Ÿคญ it’s just tooooo good! Below I put is the ricotta recipe! Let me know if you guys would want the super simple “grilled cheese” recipe too and I’ll get on it ❣️ Vegan spinach almond Ricotta
Ingredients:
1 (14 ounce) package of firm tofu
1 cup raw almonds
1/2 tsp salt
4 tbsp nutritional yeast
1/2 tbsp garlic powder
1/2 tbsp onion powder
1/4 tsp pepper
3 cups chopped spinach
1/2 cup unsweetened almond milk
Method:
Bring a small pot of water to a boil. Place your raw almonds into the boiling water. Let boil for 2 minutes.
Drain the almonds immediately in a colander or strainer and rinse them with cold water to cool them. Blot the almonds dry with a paper towel.
Use your fingers to gently squeeze the almonds and loosen the skin from them. Set skinless almonds in a bowl and set aside.
Remove tofu from package and wrap in a clean kitchen towel or paper towel and squeeze for 20 seconds to allow for excess water to strain.
In a food processor or high speed blender combine tofu, blanched almonds, nutritional yeast, unsweetened almond milk, garlic powder, onion powder, salt & pepper. Blend for 1-2 minutes or until there is no chunks. Mixture will look lumpy and that is okay! Add more almond milk if needed.
In a small pan cook chopped spinach with 1 tbsp on water for 1 minute or until spinach is wilted down.
Once ricotta mixture is made and spinach is ready, combine the two in a medium size bowl and mix well. Taste mixture and add any extra salt or seasonings if needed. #grilledcheese #vegan
