This recipe was inspired by my dads go to dish. In Spanish it's called "Huevos a la mexicana!" Growing up we ALWAYS had tomatoes and onions in the kitchen, so my dad would wake up early in the morning and start chopping away to make his signature breakfast dish. My goal always is to normalize vegan food! There is nothing to miss out on when you adopt a plant based lifestyle.
