Recipe testing some stir fry sauces that will be up on the blog this week!
This is a sweet & spicy peanut sauce with grilled veg & vegan chicken for @chancythevegan ❤️

WHO WANTS A BITE OR TWO (or the whole plate ๐Ÿคท๐Ÿป‍♀️) OF MY vegan taquitos? ๐Ÿ˜‹
Anyone else grew up eating these?
JACKFRUIT TAQUITO INGREDIENTS:
1/2 white onion

1 (20 ounce) can jackfruit (in brine or water)

1/2 cup frozen corn

8 ounces barbacoa seasoning sauce (this is the one I used) or use any tomato based salsa (avoid chunky salsa)

1 tsp salt

1/4 tsp pepper

10 corn tortillas

Guacamole:
2 acovados

1/2 jalapeรฑo (optional)

1/4 cup cilantro, chopped

1 small tomato

1/4 white onion

1 tsp salt

1/4 tsp pepper

juice of 1 lime

Cashew sour cream:

1 cup raw cashews (soaked for 2 hours)

1/2 cup water
2 tbsp nutritional yeast
1/2 tsp salt
1/4 tsp pepper

juice of 1 lemon or lime
1/2 tsp garlic powder

1 onion
1 tsp salt
1/2 tsp pepper
1/2 – 1 cup shredded vegan cheese (I like “follow your heart” mozzarella cheese.
Sauce:
1/2 yellow onion
2 garlic cloves
12 tomatillos
1/2 serrano pepper
1 bunch cilantro
1 tsp salt
1 tbsp cane sugar
Cashew cream sauce
1/2 cup raw cashews (soaked for 2 hours)
1/2 juice of lemon
1/4 cup water
1 tsp garlic powder
2 tbsp cup nutritional yeast
