
You guys, I have had so many mixed emotions in the past 24 hours. I have felt happy, angry, upset, sad and quite frankly I can't wait for Monday morning to come to have a fresh start ๐ If you're reading this right now, please know that you're valued. No matter what. Know that you're important and that people love YOU! You're never alone even in the darkest days.
Anyways on a lighter note... this bowl of nourishing and vibrant foods lifted my spirits tonight. I even managed to make some oil free breaded tofu ๐

Rainy days call for 3 ingredient pancakes.
I was inspired by @diningwithdevyn epic pancake shot the other day and had to make my own!
RECIPE
-1 cup rolled oats (blended until oat flour is formed)
-3/4 cup almond milk or any plant based milk -1 ripe banana - 1/2 tbsp cinnamon (optional)
TOPPINGS -@jemorganics cashew cardamom almond butter (aka pure heaven)
- @jrorganicsfarm Strawberries - @veganlioness Kristins farm peaches - bananas - 100% maple syrup
METHOD
Blend oats first, reach a flour consistency. Add banana and almond milk to the blended oats. Blend until smooth. In a medium sized pan over medium heat, pour batter onto the pan and wait for little bubbles to appear then FLIP ! Cool for a additional 1-2 minutes and serve with all the toppings I listed above ๐
