Basil Fried Rice
For the sauce
4 tbsp soy sauce or tamari
1 tsp coconut sugar or maple syrup
1 tsp garlic powder
2 tsp rice vinegar
½ tbsp av avocado oil (or evoo)
For the Fried Rice:
1 tbsp dried basil
2 Cups jasmine rice uncooked
4 cups water
8 oz Tofu
½ tbsp avocado oil
3 cloves of garlic minced
1/2 onion, chopped
1/2 cup carrots, chopped
1 cup broccoli, chopped
1/2 cup basil leaves, chopped
salt and black pepper to taste
Sesame seeds for garnish
Combine 2 cups jasmine rice with 4 cups water and 1 tbsp dried basil in a large pot or rice cooker. Bring to a boil, once reached, turn down heat to low and cover with a lid and cook until rice is cooked and fluffy.
Mix all the sauce ingredients in a bowl. Cut tofu into cubes and add to marinate and set aside.
In a skillet, heat ½ tbsp oil over medium high heat, add onion and garlic and cook for a minute or until just turning golden. Add the chopped bell peppers, carrots and broccoli and mix in. Cook for 5 minutes.
Add the tofu to the vegetables and reserve the sauce, cook for 3 minutes.
Add in the rice, and pour the sauce over. Mix in and cook for 3 minutes. Taste and adjust salt and spice. Add in cut basil leaves, mix in and turn off heat. Serve with sesame seeds and a squeeze of lime! I topped mine with avocado and pickled onions too.

The BEST fluffy pancakes!
These are gluten free and guilt free😋 TAG a friend and have them make these for you 😂. Recipe below. (My dad says he day dreams about these 😅 so cute)
FLUFFY VEGAN Pancakes
Ingredients:
2 1/4 cups rolled oats (or store bought oat flour)
3/4 cup apple sauce
1 1/4 cup almond milk (or any non dairy milk)
1 chia egg (1 tbsp ground chia or ground flax+ 3 tbsp water)
3 tbsp coconut sugar
1 tbsp baking powder
1 tsp cinnamon
1 tsp vanilla
Pinch of salt
Instructions:
Prepare chia egg by combining ground chia or ground flax seed with water in a small bowl. Mix and set aside for 10 minutes.
In a high speed blender, blend rolled oats on high until fine flour consistency is reached. Pour oat flour into a large bowl. Add coconut sugar, baking powder, cinnamon and salt to the bowl. Mix until everything is well combined.
In a medium sized bowl combine almond milk, apple sauce, chia egg and vanilla. Whisk until it is well combined. * you can also put this mixture in a blender and blend until well combined. *
Pour the wet mixture into the dry ingredients and mix until everything is well combined. The mixture will look thick & lumpy and that is okay! Feel free to add a splash or two of almond milk if you feel that the batter is too thick.
Heat a large non stick skillet on medium to high heat. Pour batter into a blender so you can easily pour them on to the pan. If you have a better method, use it! I just think that the spout on the blender makes it easy to make perfect pancakes.
Pour the batter onto a greased pan (I usually use coconut oil or vegan butter) making a circle, you can use a spoon to even out the pancake. Flip when bubbles appear in the middle and the edges turn slightly dry. Cook for 1-2 minutes more on the other side.Batter should make 8-10 pancakes depending on how big or small you make them.
Top your pancakes with any fruit that is in season, nut butter, nuts and seeds, maple syrup or any toppings you love.

VEGAN TORTA.
Who wants one? Tag a friend & grab Recipe! (Makes 1 sandwich)
Torta bread (I used Bolillo)
Refried beans (I used organic store bought)
4 linces Oyster mushrooms
1 tsp avocado oil
2 tbsp tamari
1 tsp Garlic powder
1/2 tsp Salt
1/4 tsp Pepper
Bunch of Cilantro
1/2 Tomato
1/2 Avocado
2 Lettuce leaves
Pickled onions:
1 Red onion
1 cup white or red Vinegar •Pickled red onions:
Thinly slice red onions and place in a jar. Pour white or red vinegar over onions. Make sure all the onions are submerged in the vinegar, seal jar and let sit for 1 hour.
•Oyster mushrooms:
In medium sized bowl combine oil, tamari, garlic powder, salt and pepper. Whisk together . What a large pan over medium to high heat. Dunk each mushroom into the mixture and then onto the hot pan.
Cool for 2-3 minutes on each side. Once all the mushrooms are on the pan you can pour the remainder of the sauce over the mushrooms.
•Assemble the torta: -I used store bought refried beans to make things faster. Heat beans in a bowl.
-Cut and toast the bread
-Slice avocado, lettuce and tomato.
-Once all ingredients are ready, grab the bottom piece of the bread and spread a generous layer of refried beans followed by oyster mushrooms, tomato, avocado, lettuce,
Cilantro, and pickled onions.

TORTA VEGANA (Hace 1 sándwich)
1 Bolillo
Frijoles refritos
4 onzas Setas
1 cucharadita de aceite de aguacate o aceite de oliva
2 cucharadas de tamari o salsa de soya
1 cucharadita de ajo en polvo
1/2 cucharadita de sal
1/4 cucharadita de pimienta
Cilantro
1/2 Tomate
1/2 aguacate
2 hojas de lechuga
Cebollas en vinagre:
1 cebolla roja
1 taza de vinagre blanco o rojo •Cebollas en vinagre:
Cortar finamente las cebollas rojas y poner en un frasco. Combina vinagre blanco o rojo con la cebolla. Asegúrese de que todas las cebollas estén sumergidas en el vinagre, cierre el frasco y deje reposar por 1 hora.
•Setas:
En un tazón mediano, combine el aceite, el tamari, el ajo en polvo, la sal y la pimienta. Batir juntos. Pon sartén grande a fuego medio a alto. Clava cada hongo en la mezcla y luego en la sartén caliente.

Mi cenita de hoy.🌿 solo un plato con todas las verduras en mi refrigerador, bien sazonado y horneado con arroz jazmín, condimento de arroz, aguacate & kimchi! Este es mi consejo para hacer las verduras TAN buenas. • Use ajo en polvo, condimento de Cajun, cebolla en polvo y siempre sal y pimienta!
• Me gusta usar un poco de aceite de aguacate pero puedes usar aceite de coco o oliva • Hornee en el horno a 400 grados F hasta que estén un poco dorados . Veggies que saben deliciosossss.
