Ingredients
Cajun Roasted Cauliflower:
1 large cauliflower
1 tbsp olive oil
1 tbsp spicely organic cajun seasoning
1 tsp salt
Cashew cream :
1 cup raw cashews
½ cup unsweetened almond milk
2 tbsp nutritional yeast
½ tsp salt
Juice of 1 lemon
Pickled onions :
1 red onion, sliced thinly
1 cup red wine vinegar
1 tsp spicely organics black peppercorns
Other ingredients :
Corn tortillas (or flour)
Limes
Cilantro, chopped
For the pickled onions combine all in a jar and let sit for 30 minutes to 1 hour before enjoying. *You can Store in fridge for up to a couple weeks and enjoy on tacos, salads and many more dishes!
Place raw cashews in a medium sized bowl and cover with hot water and let sit for 20 minutes.
Preheat oven to 400 degrees F. Cut cauliflower into small florets and place in a bowl along with olive oil, cajun seasoning and salt. Toss until each floret is evenly coated. Spread out cauliflower onto baking sheet lined with parchment paper and bake for 25 minutes.
Once the raw cashews have soaked in the hot water for 20 minutes, discard water and place cashews in a high speed blender or food processor along with almond milk, nutritional yeast, salt and lemon juice. Blend on high until smooth.
Once cauliflower is baked and out of the oven heat tortillas and assemble tacos by adding a generous handful of baked cauliflower, a spoonful of cashew cream, pickled onions, squeeze of lime and a sprinkle of chopped cilantro.

Ingredients:
4 frozen bananas
1/2 vanilla bean or 1/2 tsp vanilla extract
2 dates, pitted
2 tbsp cacao powder
1/2 tsp cinnamon
3/4 cup cold brew
1/2 cup almond milk
2 tbsp cacao nibs
Place all ingredients in a blender except cacao nibs and Blend on high for 1 minute or until smooth. Add in cacao nibs and pulse 4 times. You want to break up the cacao nibs but not fully blend them in. Pour and enjoy!
*chocolate rim is optional, but highly recommend if you’re having this for dessert / sweet treat ✨

Ingredients
SWEET POTATOES:
3-4 sweet potatoes
1 tbsp avocado oil (or oil of choice)
Salt & pepper to taste •Cut into disks and bake at 400 degrees F for 35 minutes
ROASTED CORN GUAC
2 avocados
1/2 brunch cilantro, chopped
Juice of 1 lime
1 cup frozen corn
1/2 tsp salt
1/4 tsp pepper
1/2 tsp garlic powder
1/2 tsp onion powder •In a medium sized pan sautรฉ corn until it begins to char. In a medium sized bowl mash avocados then add the remainder ingredients. Mix until well combined.
PICKLED ONIONS
1/2 red onion, sliced thinly
3/4 cup red wine vinegar
1 tsp pepper corns •combine all in a jar and let sit for 1 hour before enjoying. *You can Store in fridge for up to a couple weeks.
ROASTED CHICKPEAS
1 Can garbanzo beans or chickpeas
1 tbsp Cajun seasoning
1 tsp salt
1 tbsp avocado oil •combine all ingredients in a medium size bowl and toss. Bake in a preheated oven at 400 degrees for 20 minutes or until golden brown. Take out of oven and let sit for 10 minutes to cool... they will begin crunchier as they cool.
