Alexa Plant Food Curry spiced baked fries

Curry spiced baked fries + dill coconut yogurt dipping sauce ✨ WHO CAN DIG THIS?

Recipe:
Fries:
2-3 lb Yukon gold potatoes
1 1/2 tbsp curry powder
1 tsp salt
Dill dipping sauce:
3/4 cup coconut milk yogurt
2 tbsp dried dill
Juice of 1 lemon
1/2 tsp salt
1/4 tsp pepper
1 tsp garlic powder
Method:
1. cut potatoes into thick fry shape. Add to a large bowl along with curry powder and salt. Toss until fries are coated. Place in a preheated oven at 400 degrees and bake for 35 minutes.
2. In a small bowl combine dipping sauce ingredients and whisk until well combined.

INGREDIENTS
1/2 cup natural peanut butter
3/4 cup canned coconut milk
2 1/2 tbsp cane sugar (or coconut sugar)
2 1/2 tbsp soy sauce (or tamari)
INSTRUCTIONS
1.Place all ingredients in a sauce pan over medium to low heat.
2. Whisk together until well combined, whisk for 30 seconds, let simmer for 30 seconds, turn off heat and pour into a small bowl. (You may need to add more coconut milk until you reach the consistency you desire.)
3. Enjoy with spring rolls, wraps, over rice bowls or any dish your heart desires.

Avo pesto
1 Cup Fresh Basil
1/2 Avocado
1/2 Cup Water
1/4 Cup Nutritional Yeast
1/4 Cup Pine Nuts (or raw cashews)
2 Cloves Garlic
Juice of 1 lime or lemon
Salt
pepper to taste

Method:

Fill a large pot 3/4 full with water, bring to a boil.
To a food processor, add basil, avocado, water, nutritional yeast, pine nuts, garlic, lime juice and salt and pepper to taste. Mix to combine.
Continue blending, scraping down sides as needed, until creamy and fully combined. If it has trouble blending add a bit more water. Add to noodles or use as a dipping sauce!

Ingredients:
1 head of cauliflower
1 1/4 Cup unsweetened soy milk or any plant milk
1 Cup all-purpose flour
1 tsp garlic powder
1 tsp onion powder
1 tsp cumin
1 tsp of paprika
1/2 tsp turmeric
1/4 tsp sea salt
1/4 tsp ground pepper
1 Cup frank’s red hot sauce or any vegan buffalo sauce
Seasoned Fries :
1 tsp garlic powder
1 tsp onion powder
1 tsp cumin
1 tsp of paprika
1/2 tsp turmeric
1/2 tsp sea salt
1/4 tsp ground pepper
4-6 russet potatoes, peeled
Vegan Ranch:
1/2 cup vegan mayo, I used the brand “follow your heart”
1/4 cup unsweetened soy milk
2 tbsp finely chopped cilantro
1/4 tsp ground pepper
1/4 tsp garlic powder
1/4 tsp onion powder
1/2 tbsp apple cider vinegar
