Pumpkin blondies with chocolate chunks, walnuts and sea salt.

Ingredients:
2 cup oat flour (blend 2 1/4 cup rolled oats to create or flour)
1 cup coconut sugar
1/2 tsp salt
1 tbsp cinnamon
1/2 cup maple syrup
1 @lilys_sweets_chocolate chocolate bar, I used the extremely dark
1 cup pumpkin purรฉe
1/2 cup coconut oil
3/4 cup walnuts, chopped

Method:
1.In a large bowl combine oat flour, coconut sugar, cinnamon and salt.Whisk together. Chop chocolate bar, add to dry ingredients followed by the chopped walnuts.
2.Next add pumpkin purรฉe, coconut oil and maple syrup. Mix well and scoop batter into greased 8 x 8 brownie pan.
3.bake in oven for 45 minutes at 350 degrees F. Remove from oven and let sit for 1 hour before cutting! .

For me it’s when I’m in the kitchen with a handful of ingredients and the freedom to express my creativity. Ever since I was a very little girl, cooking & experimenting in the kitchen has always been natural for me ✨ There was a reason why at 12 years old I was obsessed with watching cooking shows and why in the 6th grade I chose to do my class project on “how to make homemade sushi” ๐Ÿคญ๐Ÿ˜….
Tonight’s little fancy yet so simple dinner tonight was:
SWEET POTATO GNOCHI!
Sauteed with a vegan butter garlic sauce, spinach, mushrooms topped with chili flakes and crushed pistachios

HERB Vegan BISCUITS!
Just in time for the holidays. Only a few ingredients needed and you can whip these up in 25 minutes or less!

Herb Vegan Biscuits
Makes 10-12 biscuits
Ingredients:
* 1/2 cup (cold) vegan butter
* 2 1/2 cups flour * 3 1/2 tsp baking powder
* 1 1/2 tsp salt * 1 cup almond milk
* 2 tbsp dried chives
* 1 tbsp dried parsley * 1 tbsp dried thyme
Method:
1. Preheat oven to 475°. Cut cold vegan butter into small cubes. Toss together butter and flour in a medium bowl with your hands quickly, breaking in the butter into the flour until it looks like wet sand. Then add in baking powder, salt, dried thyme, dried chives and dried parsley.
2. Make a well in center of mixture. Add almond milk, and stir 15 times. Dough will be sticky.
3. Place dough out onto a lightly floured surface. Lightly sprinkle flour over top of dough. Using a lightly floured rolling pin, roll dough into a 3/4-inch-thick rectangle. Fold dough in half so short ends meet. Repeat rolling and folding process 4 more times.
4. Roll dough to 1/2-inch thickness. Cut with a 2 1/2-inch floured round cutter, reshaping scraps and flouring as needed.
5. Place dough rounds on a baking sheet lined with parchment paper. Bake for 15 minutes or until lightly browned. Take out of oven and Brush with melted butter. Serve / eat WARM! With a little vegan butter or gravy ๐Ÿ˜
