Matcha Lemon Poppy Seed Loaf!

Ingredients:
3 cups all-purpose flour
1 cup + 4 tbsp cane sugar
1 tsp salt
1 tbsp baking powder
1 3/4 cup almond milk, unsweetened
1 cup refined coconut oil, melted
2 tsp vanilla extract
4 tbsp lemon juice
2 tbsp lemon zest
2 tsp Matcha (@aiyamatcha cooking grade matcha)
4 tbsp poppy seeds
Glaze:
1 cup organic powdered sugar
1 tbsp lemon juice
Method:
Method:
1. Preheat oven to 350 degrees F and grease a 9"x 5" loaf pan with coconut oil and lightly dust with flour and set aside.
2. In a large bowl whisk together almond milk, melted coconut oil, vanilla extract, lemon juice and lemon zest.
3. Next add cane sugar to the liquid and whisk. Then add salt, baking powder and mix.
4. Gradually add flour 1 cup at a time to the liquid, whisking in between.
5. Once batter is mixed well and is smooth...scoop one cup of batter into a medium sized bowl. To the 1 cup of batter add the matcha powder and mix until well incorporated.
6. To the remainder of batter, add 4 tbsp of poppy seeds and mix until well incorporated.
7. Grab your greased pan and pour half the amount of poppy seed batter to the bottom of the pan, spread evenly then add all of the matcha batter on top, spreading evenly, then add the other half of the poppy seed batter. For the swirl, run a dull knife through the batter 3 or 4 times, lengthwise.
8. Bake for 45-50 minutes or until a toothpick inserted in the center comes out clean. Cool in the pan at least 10 minutes.
9. For the glaze simply place powered sugar and lemon juice in a small bowl and whisk together until smooth.
10. Pour the glaze on the loaf and spread it around to fully cover the top of the bread. Allow the glaze to harden for 15-20 minutes, then slice and enjoy!

1. Good quality rustic bread, like sourdough, multigrain sourdough... try to get bread from a local bakery. I really love @sadierosebakingco that I purchase at sprouts.
2 . Get a good spread or use a ripe avocado! I’m forever obsessed with this almond spread by @bitchinsauce. The Bombay or cilantro is my fav.
3. Sautรฉ your favorite veg like mushrooms, zucchini, or eggplant in a little coconut oil, soy sauce, garlic powder and pinch of salt.
4. Top it all off with a little chili flakes and or fresh herbs. I love basil or cilantro.

Chocolate protein pancakes with salted date caramel butter.
I often get asked what plant protein powder I like and my favorite for the past several months is @ora.organic . @chancy.james really loves it too in his post workout smoothies ✨

Pancakes:
2 1/4 cups rolled oats
3/4 cup apple sauce
1 1/2 cup almond milk (or any non dairy milk)
1 chia egg (1 tbsp ground chia or ground flax+ 3 tbsp water)
3 tbsp coconut sugar
1 tbsp baking powder
2 scoops @ora.organic chocolate protein powder
Pinch of salt
(Optional) 1 1/2 tbsp cacao powder
Date caramel butter:
8 medjool dates (Pitted)
1/2 cup almond butter
2 tbsp warm water
1 tsp cinnamon (optional)
Other toppings:
100% maple syrup
Flakey sea salt
Fresh fruit (optional)
Instructions:
1. Prepare chia egg by combining ground chia or ground flax seed with water in a small bowl. Mix and set aside for 10 minutes.
2. In a high speed blender, blend rolled oats on high until fine flour consistency is reached. Pour oat flour into a large bowl. Add coconut sugar, baking powder, @ora.organic protein powder, cacao powder, salt to the bowl. Mix until everything is well combined.
3. In a medium sized bowl combine almond milk, apple sauce, chia egg and whisk until it is well combined.
4. Pour the wet mixture into the dry ingredients and mix until everything is well combined. The mixture will look thick & slightly lumpy and that is okay! Feel free to add a splash or two of almond milk if you feel that the batter is too thick.
5. Heat a large non stick skillet on medium to high heat. Pour batter into a blender so you can easily pour them on to the pan. If you have a better method, use it! I just think that the spout on the blender makes it easy to make perfect pancakes.
