Ingredients
Cajun Roasted Cauliflower:
1 large cauliflower
1 tbsp olive oil or avocado oil
1 tbsp spicely organic cajun seasoning
1 tsp salt
Cashew cream :
1 cup raw cashews
½ cup unsweetened almond milk
2 tbsp nutritional yeast
½ tsp salt
Juice of 1 lemon
Pickled onions :
1 red onion, sliced thinly
1 cup red wine vinegar
1 tsp spicely organics black peppercorns
Other ingredients :
Corn tortillas (or flour)
Limes
Cilantro, chopped
For the pickled onions combine all in a jar and let sit for 30 minutes to 1 hour before enjoying. *You can Store in fridge for up to a couple weeks and enjoy on tacos, salads and many more dishes!
Place raw cashews in a medium sized bowl and cover with hot water and let sit for 20 minutes.
Preheat oven to 400 degrees F. Cut cauliflower into small florets and place in a bowl along with olive oil, cajun seasoning and salt. Toss until each floret is evenly coated. Spread out cauliflower onto baking sheet lined with parchment paper and bake for 25 minutes.
Once the raw cashews have soaked in the hot water for 20 minutes, discard water and place cashews in a high speed blender or food processor along with almond milk, nutritional yeast, salt and lemon juice. Blend on high until smooth.
Once cauliflower is baked and out of the oven heat tortillas and assemble tacos by adding a generous handful of baked cauliflower, a spoonful of cashew cream, pickled onions, squeeze of lime and a sprinkle of chopped cilantro.

When I make gyozas or homemade tortellinis I try to make extra so I can freeze some for nights that I can’t be bothered to make an elaborate meal ๐Ÿคญ tag a friend a snag ingredients below (the directions are not posted below because they’re lengthy but I linked the full recipe in my bio✨) INGREDIENTS
Store-bought Gyoza (or wanton) wrappers or refer to recipe below
Gyoza wrapper:
2 cups all purpose flour
3/4 cup hot water
1 tsp salt

Filling:
2 cups mushrooms, diced very small
1 cup carrot, diced very small
2 cups spinach, chopped
1 small onion or half a large onion, diced very small
4 garlic cloves, crusheD
2 tbsp soy sauce
1-2 tbsp coconut aminos
1/2 tsp salt (if needed)
1/4 tsp pepper

Sweet potato taquitos with vegan cashew sour cream, avo & cilantro (& a side of salsa). Tag a friend and grab the super SIMPLE & EASY recipe below.
Ingredients:
Corn tortillas ( I used 8 tortillas)
3 medium sized sweet potatoes
3 tbsp nutritional yeast
1 tsp salt
1/4 tsp pepper
1/2 tsp garlic powder
1-2 tbsp avocado oil (or olive oil)
Method:
1. Wash and poke holes in sweet potatoes. Bake in preheated oven at 400 degrees F. for 40 minutes.
2. Once potatoes are soft in the inside remove skin and mash in a medium sized bowl with nutritional yeast, salt, pepper, garlic powder. Mix until well combined.
3. Heat corn tortillas slightly before assembling so that the tortillas are easier to roll / don’t tear.
4. Place 1-2 spoon fulls of sweet potato filling and roll into taquitos.
5. You can pan fry the taquitos in a little bit of avocado or olive oil for 2 minutes on each side or bake them in the oven for 10 minutes at 375 degrees F.
6. Prepare cashew sour cream (recipe in on my blog) , and any other toppings and enjoy :)
