Ingredients:
1 French loaf @essentialbaking
6 tbsp vegan butter (soften)
4 cloves garlic, finely minced
2 tbsp fresh cilantro or parsley, chopped
Pinch of salt
Instructions:
1. Preheat oven to 425 degrees F and line a large baking sheet with parchment paper. Slice bread and place on baking sheet.
2. In a medium bowl, mix butter, garlic, chopped cilantro and salt together until well combined. Spread evenly over each piece of bread.
3. Bake for 10-15 minutes or until slightly golden brown on the edges or as golden as you like!

EASY VEGAN ARROZ CON LECHE!
Mexican rice pudding๐Ÿ’ซ

Vegan arroz con leche
Serves 5-6
Ingredients:
7 cups water
1 cup long-grain white rice
2 cinnamon sticks
One 13 ounce can coconut cream
1 1/2 cups cashew milk
1/3 cup to 1/2 cup 100% maple syrup or coconut sugar (depends on your preference of sweetness)
Ground cinnamon, for dusting
Method:
Put the water, rice, and cinnamon stick in a medium-size heavy saucepan set over medium-high heat. Bring to a boil, uncovered, and cook until the rice is tender, about 18 minutes.
Strain out the liquid, discard the cinnamon and reserve the rice. Return the rice to the saucepan. Shake the can of coconut cream then add it to the rice followed by the cashew milk, and maple syrup. Continue cooking over medium-high heat until the mixture comes to a boil. Reduce the heat to low and cook, uncovered, stirring constantly, until the mixture is thick, about 20 minutes.
Transfer the pudding to a serving bowl. Dust the top of the pudding with ground cinnamon and serve.
I personally like it cold! It tends to firm up really well in the fridge over night or after a few hours. Enjoy! •

TWO ingredient sweet potato gnocchi.

RECIPE
Ingredients:
2 large sweet potatoess (2 cups mashed)
2 1/2 cups whole wheat flour
1 tsp salt
Method:
1.Preheat oven to 400 degrees.
2.Place sweet potatoes on a baking sheet and bake for 40-50 minutes, until skin is crispy and flesh is tender. Let potatoes rest until they are cool enough to handle. Peel the skins from the potatoes and discard (or I like to eat is organic)
3.Place sweet potatoes in a large bowl, add a tsp of salt and  mash with fork really well.
4.On a clean work surface, sprinkle a little flour and mound the sweet potatoes and create a well in the center. Add 1/2 a cup of flour at a time over the potatoes. Stir with a fork to incorporate the flour and potatoes together. Continue to stir until all of the flour is well incorporated. Use your hands to combine the rest of the dough, which will be sticky.
5.Cut the dough into 4 equal segments.
6.Lightly flour work surface as needed to prevent sticking.
7.Take one segment and roll it into a ball, then set it on the work surface and roll the dough into a rope about 3/4" thick. Use a sharp knife and cut 1" segments from the rope. To make the gnocchi ridges, rest a fork, tines facing down on the work surface. Hold a gnocchi and gently roll it from the bend in the fork along the tines, pressing lightly to form ridges. Repeat with remaining gnocchi dough.
8.Heat a pot of salted water to boiling.
10.Working in batches, add gnocchi to the boiling water. Cook for a few minutes, until the gnocchi naturally float to the surface. Once they gnocchi has floated to surface, let boil for 1 minute then fish the gnocchi out of the pot…Transfer gnocchi to a bowl and lightly coat with a bit of melted coconut  oil.
To get toasty
1. Heat a medium non-stick pan over a medium heat. Add 1 tsp of coconut oil and let  melt. Add gnocchi and let them crisp up on each side for 1-2 minutes.
1.Once the gnocchi are crisp transfer them to a serving dish and serve with your favorite sauce and favorite veggies or leafy greens. I served it with  sautรฉed spinach and a creamy cilantro sauce ( I thinned out @bitchinsauce ;)

The cheesiest vegan mac n cheese.
You guys asked for it!
A vegan Mac n cheese that does not involve potatoes, carrots and cashews ๐Ÿ˜‚ THIS is the real deal.
Tag a mac n cheese lover. It will fool anyone I PROMISE.
Serves about 10
Ingredients:
3 tbsp vegan butter
3 tbsp all purpose flour
2 1/4 cups unsweetened plain cashew milk
1 teaspoon garlic powder
1 teaspoon onion powder
1 teaspoon paprika
1 teaspoon salt
1/2 teaspoon pepper
1 1/2  cup shredded vegan cheddar (I used @followyourheart cheese for the other two cheeses below as well )
1 cup shredded vegan mozzarella
1 cup shredded vegan Gouda
1 lb macaroni noodles, cooked al dente
1/2 cup herbed bread crumbs
Directions:
1. In a pot over medium-high heat, melt the vegan butter and whisk in the flour until well-incorporated, about one minute.
2. Add the cashew milk a 1/4 cup at a time, whisking constantly until absorbed. Keep adding the milk until fully absorbed and the mixture is smooth, has thickened and is creamy.
3. Reduce the heat to low and add garlic powder, onion powder, paprika, salt, and pepper. Then add all the shredded vegan cheese but reserve 1/2 a cup (for topping later). Stir until smooth.
4. Add the cooked macaroni and mix until fully coated.
5. Pour the mac and cheese into a baking dish and top with the reserved 1/2 cup shredded vegan cheese, and bread crumbs.
Broil on high for 5 minutes or until golden brown. .
