PUMPKIN CHEESECAKE FUDGE BROWNIES
Ingredients:
1 cup oat flour (blend 1 1/4 cup rolled oats to create or flour)
1 cup cacao powder
1 cup coconut sugar
1/2 tsp salt
1/2 cup maple syrup
1 cup @lilys_sweets_chocolate chocolate chips
1 cup pumpkin purée
1/2 cup coconut oil oil
Cheesecake topping:
8 ounces vegan cream cheese ( I purchase the Trader Joe’s brand)
2 tbs maple syrup
4 tbs pumpkin purée
Method:
In a large bowl combine oat flour, cacao powder, coconut sugar and salt. Whisk together.
Add chocolate chips and mix in.
Next add pumpkin purée, coconut oil and maple syrup. Mix well and scoop batter into greased 8 x 8 brownie pan.
Next in a bowl place cream cheese with 2 tbsp maple syrup. Whisk together well.
Add 2 tablespoons of pumpkin purée and fold in gently and quickly allowing for swirls of pumpkin to appear in the cream cheese.
Next dollop cream cheese onto the brownies and make swirl like motions. Add a handful of chocolate chips on top and bake in oven for 45 - 50 minutes at 350 degrees F. Remove from oven and let sit for 1 hour before cutting! (PATIENCE! ;)) •

SPICED CHOCOLATE FUDGE CAKE!

Recipe 🍰 -INGREDIENTS-
CRUST
1/3 cup hazelnut flour
1/2 cup unsweetened shredded coconut
1/3 cup almond flour
2 tablespoons cacao powder
2 tablespoons cacao nibs
1/2 tsp of salt
10 medjool dates, pitted
1 tbsp maple syrup
2 tbsp coconut oil
FILLING
1 1/2 cups cashew nuts (soaked overnight in filtered water or in hot water for 20 minutes)
3/4 cup coconut milk (from a can)
7 medjool dates, pitted
1/2 teaspoon vanilla extract
1/2 teaspoon salt
3/4 cups cacao powder
1/3 cup coconut oil
1/4 cup maple syrup
1 tsp cinnamon
1/2 tsp nutmeg
Optional ganache
10 ounces dark chocolate (non dairy)
1 1/2 tbsp coconut oil
Method:
1. Before you begin this recipe soak your raw cashews. If you have the time soak them in filtered water for at least 2 hours or over night OR you can soak in hot water for 20 minutes.
2. To a food processor add all crust ingredients and pulse! It should come together into a sticky dough.
3. Grease a 6” springform pan with 1 tsp melted coconut oil. Remove crust from food processor and press into the greased pan, evenly pressing down and pushing the crust to the sides as well. Set aside.
4. In a high speed blender combine cashews, (shake coconut milk can before opening) coconut milk and the remaining ingredients. Blend until smooth. Taste and adjust sweetness by adding more maple syrup if needed.
5.Pour the filling on top of the crust and spread with a spoon or spatula creating a smooth top. Place In freezer for 4 hours or over-night.
Run a sharp knife along the edge of the pan and cheesecake and then release cake from pan.
6. Chop the chocolate into small pieces. Place chocolate in microwave safe bowl and place in microwave heating in 30 second intervals, stirring in between until the chocolate is melted. Add coconut oil & stir in.
7. Spread an even layer of chocolate over the cake. Add a optional dust of cinnamon + cacao powder mixture over top. Let sit for 15 minutes, cut in and enjoy!

GRILLED CHEESE DONE RIGHT- Follow directions carefully below. it’s all in the small details ;)
Step one: use the right VEGAN CHEESE. Yea I know... there are some vegan cheeses that are no bueno (I’m rarely impressed😅)
SO... for grilled cheese in particular, use either @followyourheart mozzarella block OR @violife_foods mozzarella block.
Step two: BREAD. This is important. If you can, try to use bread from a bakery or farmers market near you. Here in San Diego we have amazing artisan bread 😋 I really like @pragerbrothers or @sadierosebakingco .
Step three: BUTTER. Vegan butter according to @chancy.james HAS to be a vegan staple😂 if we are ever out he says “what kind of vegans are we”. We usually purchase @earthbalance ... its so good it fools my family. If you can get your hands on @miyokos_kitchen cultured vegan butter DO IT.

Ingredients
1 tsp @aiyamatcha matcha
4 almond milk cubes
1 cup almond milk
1 tbsp maple syrup or 2 dates,pitted
1 tbsp cacao nibs
1/4 tsp Himalayan salt (optional)
1 tsp maca (optional)
METHOD:
*freeze almond milk in an ice cube tray*
In a blender combine all ingredients in a blender except for the cacao nibs. Blend until slushy texture is reached. Then add cacao nibs and pulse in. Pour and enjoy ✨
